I went here for breakfast because I inquired asking various people where can I get a good breakfast and all replied that there is a buffet place within the Doubletree Hotel named Lindsay's. The location is a nice size and has an elegant ambiance. Initially I thought it was small because I only viewed the fruit bar but the waitress, Tara, showed me that the buffet has multiple stations that cover a larger area. I fell in love with the presentation and couldn't wait to taste the entrees. During my breakfast, I overheard the chef speaking to staff members of what he was going to prepare for dinner. He had passion in his description of how he ensures proper preparation of various entrees. I inquired if he had formal training because of his passion for food preparation. He informed me he was a graduate of Le Cordon Bleu College of Culinary Arts in Chicago. I inquired his name and he informed me he was Mario Criss the Chef. I told him I would probably return for dinner as I overheard the passion of his craft. I requested to speak to his supervisor and Executive Sous Chef Patricia Collier responded. I explained how impressed with the restaurants presentation of food and food taste. I related how the oatmeal I was eating, named Superberry Almond Crunch and how I was impressed with Chef Criss. I explained that I was also impressed with the next door restaurant, The Globe, that I had lunch at yesterday and she informed me the food is prepared by the same chef staff that she is in charge of. I told her I was very happy with both restaurants because they had a healthy variety of food choices for a choosy person as myself. I have included photos of my experience. I should have took a picture of my plate but I ate and enjoyed it! Can't wait for dinner and I will tell my friends.

As guests in the hotel, must say, the restaurant is quite enjoyable for the breakfast crowd (cannot say anything about lunch or dinner, but if the breakfast is any sign, it should be very good). Started out with Orange Juice and Coffee, (I judge a place by it's coffee) coffee was very enjoyable & strong. Breakfast consisted of much home made and locally grown products (asked the friendly chef). We had: Biscuits & Gravy, Tater Tots, Hash Browns, Bacon, Eggs poached or scrambled, cereal (s), oatmeal if you would like (freshly made), Pancakes... Any of choices you would like for breakfast were definitely available. Home made Calhoun Peach Coffee Cake, the bomb. Very accommodating too. A great way to start anyone's morning, enjoy next time in Springfield. Cheers!

I don't think of it as a restaurant. It's the free breakfast buffet that they serve to the hotel guests. And remainder of the day it's just usual hotel/room service food. Been going there for breakfast everyday this week and it is very standard - and that is a good thing. Service is excellent
